The expansion of the organic food market and the growing competition are factors that fuel the differentiation of organic food products. Differentiation may be achieved by developing “organic-plus” products that integrate other value-adding characteristics beyond the organic quality. In this context, the aim of this study was to explore whether consumers would notice and value further improvements in the animal welfare standards than those imposed by organic regulation. The results of three focus groups designed as a concept test reveal positive attitudes towards the proposed production process from both regular and occasional organic buyers. Recent studies reveal that consumers respond favourably to “organic plus” products with additional ethical attributes. The aim of the current study is to explore whether consumers would notice and value further improvements in the animal welfare standards than those imposed by the organic regulation. The results of a qualitative concept test reveal positive attitudes towards the proposed production process. The discussions about fewer standards being sufficient or about options “in-between” conventional and organic standards indicate that the difference in production processes is noticed, yet it is probably valued less than expected. Case studies/Strategic group analyses report of high value organic products Organic Eprints

This report concerns the analysis of successful high-value products as case studies in each of the three meat categories: chicken, beef and pork. The main objective of our study was to identify strategic groups within the meat market, in which the new, high-value organic meat products were going to perform. The strategic group analysis also serves as a benchmark for determining the competitive situation on the Danish meat market. Hence, we analyse the market performance of the strategic groups and we describe the competition on the market, in order to identify the optimal market position for the new products.

Do taste expectations mediate the impact of quality cues on consumers’ choice of chicken? Organic Eprints

The hypothesis of this research is that the impact of quality dimensions on consumers’ willingness to buy organic vs. conventional or free-range chicken is partly mediated through taste expectations. The study comprises two exploratory focus group studies, followed by a questionnaire containing a conjoint analysis design. The purpose of the focus groups was to determine the most important quality cues, which could afterwards be incorporated into the choice experiment. The role of price as a product attribute in the organic food context: An exploration based on actual purchase data (D.6.7) Organic Eprints

High prices are often reported as an obstacle that inhibits the purchase of organic food products. The aim of this paper is to investigate how organic food products perform at different price levels and whether high prices are an advantage or a disadvantage for consumers’ repeat purchase of organic food. Based on analyses of actual purchase data, this study explores the effect of two product attributes (production method and price) on repeat purchase. The analysis is based on purchase data for four product categories (red meat, chicken, milk and hard cheese) registered by the GfK panel in 2011 in Denmark.
